This is one of the best investments I have ever made in a cooking pot. I was reluctant to buy it initially because it is expensive, but I have been using it steadily for ten years now and it's just great. I use it to make Osso Bucco, I braise lamb shanks and make venison stews. I prepare beets with it. It handles pot roasts and briscits very nicely. It significantly shortens cooking time and I find that many dishes that benefit from long cooking with an overnight rest can be be prepared for same day meals. There is a trick.... Since it takes very little time, relatively speaking, to braise something you have time to to let the dish rest for an hour or so to come together. You can then reheat it and you have something that would have required several hours of cooking all done in less than half the time and it gets the benefit of the resting time.
